刀削面！

Literally this translates into "knife scraped noodles.".  He uses a knife to "peel" the dough and the noodle peels fly straight into his boiling cauldron.  These noodles are yummy.  The are a Northern specialty and if you are to believe the guy from Xian who was eating next to me, these can't compare to the noodles up north.  Perhaps, but having spent some time in the north myself, I thought they made the cut.  Har har.  I know, that was terrible.  :)
